Camping

For the next few weeks this camp will be home away from home for at least one of us.  I think it’s a pretty nice set up.  Cooking, cleanup and sanitation will be challenging, but that’s camping.  I slept really well last night, my cot is very comfy with layers of Thermarest, a sleeping bag, a down comforter and two full size pillows.  We have a lot of stuff down here, I need a house to put it all away in.

I cooked our evening meals in the dutch oven.  Chicken with peppers and onions over rice was ok, the chicken got a little dry.  Hobo stew (made usually in aluminum packets) was also a good hot meal but nothing to rave about.  Layered eggs was amazing, so good Kimmy actually asked for seconds.  It uses precooked frozen potatoes O’Brien and breakfast sausage, a carton of egg beaters, and whatever veggies you want to add (I added spinach).  Spice it up and add catsup and everyone is happy.

It was really hot Monday – Thursday, but on Friday as we were trying to finish up and get out it got really cold out.  The wind was nonstop and I would have liked my jacket and sweatshirt on so it was really hard to work for long.  So, we wrapped it up by noon, packed up camp and got on the road.  Five days at a stretch is about my limit.  Josh and I will be back next week sans dog or kiddos.
